Mediterranean Spice
and Herbs Rice Mix
2 cups par-boiled rice (I used brown minute rice)
1/4 tsp oregano
1/2 tsp basil
½ tsp parsley
½ tsp thyme
¼ tsp ground allspice
½ tsp ground pepper
1/8 to ¼ tsp chili powder
1/8 to ¼ tsp cumin
optional:
1/2 to 1 tsp salt (use less if using broth instead of water)
Mix all ingredients in a ziplock bag. Add salt or wait to season to taste after
cooking. Write the following directions
on the bag: Bring 2 cups water or broth to boil. Stir in rice mix and simmer, covered, for 5
minutes. Pull off heat and let sit,
covered, for 5 minutes. Add salt to
taste if not included in mix.
